Fred's Smoked Macaroni & Cheese

2 cups macaroni noodles 1 cup of plain nonfat yogurt 2/3 cup mayonnaise 1 can evaporated milk 1 pint of heavy whipping cream 1 block extra sharp cheddar cheese chunked 1 cup taco cheese shredded 4tbsp of butter 1/4 cup of flour 1 Tbsp of Fred’s Butt Rub mixed with other ingredients and dusting of FBR as desired on top First boil your noodles for about 7 minutes. While, these are cooking start a roux by melting your your butter and gradually adding flour till a smooth consistency...then gradually add whipping cream... Next add your cup of taco cheese and stir till melted.. add yogurt and mayo stirring till all the ingredients are mixed together Then mix the cheese mixture with the cooked noodles in a greased casserole dish that can go on the smoker Lastly add the chucked cheese, and evaporated milk along with 1 tbsp of Fred's Butt Rub. Mix all this around good. I also like to put a top layer of a little more shredded cheese and a top dusting of the Fred's Butt Rub!!...So Good!!!
Now, your ready to put on the smoker! I do 350 for about 40 to 50 minutes uncovered. You want it to be nice and bubbly and get that nice smoked taste. But,be sure not to overcook because you may want it gooey and not dry..Enjoy!
